Chicken & Fruit Salad

This past weekend I played chef for friends who had family come to town for a wedding. I love cooking so this was a lot of fun for me.  I didn't get too elaborate with lunches.  We just had salads and sandwiches. The potato salad I will share tomorrow was one of the salads.  Another salad I made was chicken & fruit salad.  I love this fresh & light chicken salad.  The apples and grapes in it keep it light.

When I first made this salad for my grandma (the one that made the potato salad), she told me that sounded terrible and she didn't want any.  I made her try it and she loved it.  She was just an old dog who wanted nothing to do with new tricks.  I would recommend trying this new trick and so would she.

Chicken & Fruit Salad

1 cup mayonnaise
1 Tbsp red wine vinegar
1/2 Red apple, cubed
1/2 Green apple, cubed
5 small chicken breast halves, cooked and cubed
1/2 bunch of red or green grapes, halved
1 Tbsp fresh chopped parsley, optional
1/4 cup pecans
1/4 cup celery
Salt & pepper to taste

In a small bowl, mix mayo & vinegar.  Mix remaining ingredients in a large bowl.  Pour dressing over salad and stir. Serve right away or refrigate and serve cold.
