But I came down with a cold or sinus junk and didn't feel like baking or spreading my germs. But I'm finally starting to feel better and ready for some more fall goodies!</span><br />

To be honest, I don't drink pumpkin spice lattes ever. I've had one a long time ago but there isn't a coffee shop in the town I live in, let alone a Starbucks. So I drink all my coffee at home and am quite content with that. But I see people talking about them all the time, especially on Twitter and I think man do they sound good!!</div>

So if a pumpkin spice latte sounds good, then pumpkin spice latte muffins must be really, really good! Or at least that was the thought that kept running through my head. I love muffins, so the combo would be fantastic, right? So I decided to try it out! I used Kerry's <a data-mce-href="http://www.coffeewithus3.com/versatile-muffins/" href="http://www.coffeewithus3.com/versatile-muffins/" target="_blank" title="Versatile Muffins">Versatile Muffin</a> recipe as my base and added in my pumpkin and some of my favorite fall spices. </div>
<h3>
Pumpkin Spice Latte Muffins</h3>
1/2 c. Brown Sugar<br />
1/4 c. Granulated Sugar<br />
1/2 c. Milk<br />
2 Eggs<br />
1/4 c. Oil<br />
2 T. brewed strong Coffee, cooled<br />
3/4 c. Pumpkin puree<br />
1 tsp Vanilla<br />
1 1/2 tsp. Cinnamon<br />
1/4 tsp Nutmeg<br />
2 c. Flour<br />
2 1/2 tsp baking powder<br />
1/2 tsp salt<br />
<br />
Topping:<br />
1 T. Granulated Sugar<br />
1/2 tsp Cinnamon<br />
<br />
Preheat oven to 375. Spray muffin tin with no-stick cooking spray or use liners.<br />
Mix sugars, milk, eggs, oil, coffee, pumpkin, vanilla, and spices. Add dry ingredients and mix well.<br />
Scoop into muffin tin, filling 3/4 full.<br />
Mix sugar and cinnamon for topping and sprinkle on top of muffin mixture in tins.<br />
Bake for 18-20.<br />

The coffee flavor in these is pretty mild, so if you are a big coffee fan you may want to add a little more. I was sharing with the kiddos so didn't mind the mild flavor. These were a huge hit around our house. My 2 year old, Jet, was constantly sneaking into the kitchen to steal more muffins off the cooling rack. Apparently his arms are much longer than I realize, since I had to push the muffins farther back several times. </div>

I have two favorite dressings - poppyseed dressing & Vidalia onion dressing. The Vidalia onion dressing I use is all natural. So I'm going to not worry about it. </div><div>The Hardworking Husband bought me a salad dressing mixer last Christmas, and I've yet to really use it. So here is my chance to try it out. It's pretty snazzy! And making the dressing was pretty easy although because I wanted it creamy I had to switch up what I mixed it in.</div><div><br />

</div><div>To grate the onion, I used a microplane. It took more onion than I thought to get a 1/2 tsp. In a 12 or 16 oz canning jar, mix all ingredients. Put the lid on and shake hard for about a minute. You want all the mayo to mix in. After it's mix, use. If you are like Lucy and don't like mayo, you can leave it out. I mixed all but the mayo in my dressing mixer, but the mayo just wouldn't mix in well. I poured it in a canning jar, shook it, and poured it back in the dressing mixer. It will separate and will need mixed again. It also needs to be refrigerated. </div><div><br />
</div><div>It tastes so yummy! And no more spending crazy amounts of money on my favorite dressing. And a side note, I love having a microplane. It is so versatile. I use it for zesting, grating onions, grating Parmesan, and so much more. This is the one I have only black. Had I had red as an option when I bought mine I would have.<br />

Before Starting: </h2>
I'm a planner.<br />
Sometimes that's a good thing, but sometimes I need to learn to not get so caught up in the planning. I've spent the summer trying to plan for starting to homeschool preschool this fall. And while planning is a good thing, I think I was trying to over-analyze it.<br />
So here's what I've come up with.<br />
We will start doing preschool using this book:<br />

We'll use Teach Your Child to Read in 100 Easy Lessons every day for the suggested 15-20 minutes. They suggest teaching a lesson every day because the concepts are so new that young children quickly forget them, so that's why I'll go ahead and teach it every day. It's a very interesting curriculum, in that it teaches reading by sounds instead of by letter names. After looking into it and having it recommended to me, it sounds like a good way to introduce reading.<br />
On Monday, Wednesday and Friday, we will be doing Confessions of a Homeschooler curriculum, following the same letter order as in Teaching Your Child to Read. Confessions of a Homeschooler is a lot more than just reading, so I think the two curriculums will complement each other well, but I'm trying to stay flexible and be willing to change things up depending on how Miss Magoo is doing.<br />

<h2>
Two Weeks In:</h2>
So, it turns out it's good that I was planning to try and stay flexible!<br />
Things haven't gone exactly as I had planned. There have been days that I was up all night with Baby Girl and just didn't feel like teaching Miss Magoo. So I have to be honest and admit that things haven't gone perfectly and exactly on schedule.<br />
However, I feel like things are going well, and I'm impressed by Miss Magoo's progress.<br />
Miss Magoo has a voracious appetite for learning, which is really awesome! Sometimes it can be rough, since she wants me to teach her all day. And as she learns to count higher and higher, I have to wait while she counts every cheerio in her bowl, despite the fact that we're running late!<br />
She is already counting to 29 very well, she just wants to keep going with 20-10 and 20-11.<br />

The Curriculum:</h2>
At first, working with Teach Your Child to Read in 100 Easy Lessons was turning out to not be very easy. Because Miss Magoo already knew the names of all of her letters, she just couldn't understand why I was asking her to stop calling them by name, and instead call them by sounds. Like, why couldn't she say "em" and instead she had to say "mmmm." So that presented a few problems for the first week.<br />
There is also a section in some of the lessons about rhyming. Miss Magoo rhymes very well, but the way they do it just isn't clicking for her. They give a sound and something we're rhyming with. The child is supposed to put the two together. For instance, there will be an M on the page, and we're rhyming with "at." So Miss Magoo is supposed to say, "Mmmmat. Mat." For whatever reason, I just can't seem to get her to do it, despite continually modeling the correct way to do it. However, I'm just persevering in the hopes that at some point it will click.<br />
The awesome part is that 12 lessons in, Miss Magoo is reading short words! Today she read am, ram, see, rat, eat, seat, sam, me, and seed with minimal help from me and just a couple corrections. <br />
I'm also thrilled at her writing! While we've taught all of the letters by sight, I've never pushed writing. Each lesson in Teach Your Child to Read ends with writing practice. The first couple days, I was ready to pull my hair out. The writing just wasn't looking anything like what I was showing her, and I felt like the problem was that I wasn't communicating it well. Today was the first day the S started looking like more than scribbling. And the E was really rough, but then at MOPS a last week, she just wrote one. So progress is being made.<br />

As far as Confessions of a Homeschooler, the curriculum is pretty easy. It's more crafts, matching, and easy tasks for Miss Magoo, but she enjoys them, so I use them as rewards for trying hard during Teach Your Child to Read. <br />

And even with all the eggs that go to other people, we will have quite a lot of eggs in our house. So I've been trying to come up with more ways to eat them.<br />
The other day, an egg salad sandwich just sounded really good to me. There is only one problem: I don't like egg salad. I don't like mayo, I don't like mustard, and not really all that big of fan of celery. So why all the sudden I wanted some, I don't know. <br />
But I did. So I went on <a href="http://www.pinterest.com/coffeewithus3/boards/" target="_blank">Pinterest</a> and searched for a no mayo egg salad recipe. The recipe I found had mustard but I tweaked it even more and left out the mustard but if you're a fan you could always add some back in.<br />

2 Hard Boiled Eggs, chopped<br />
1 tbs red onion, chopped (or green onion)<br />
2 tbs Plain Greek Yogurt<br />
1 tbs Mashed Avocado (or additional Greek Yogurt)<br />
pinch Salt<br />
pinch Pepper<br />
pinch Paprika<br />
sliced cucumber, optional<br />

<b>Directions:</b><br />
In small bowl combine egg and onion. Add yogurt, avocado, salt, pepper, and paprika stirring gently. Chill for a least 30 minutes.<br />
Spread on bread, lettuce or a wrap and top with cucumbers if desired. Keep any leftovers refrigerated.<br />

I find it somewhat humorous that from the moment a baby is born, everyone is trying to decide who she looks like. She comes out all scrunched up, oddly colored and yet we're sure we see Great Aunt Bertha in her features. And in a week she'll look so different.<br />

Baby Girl looked so much like Miss Magoo when she was born. The two of them have the exact same "stork bites" on one eye, above the mouth, and on the back of the neck. So maybe that's why there was such a resemblance at the beginning.<br />

But honestly, I know it's all going to change so much. I look at the pictures of the other two when they were babies- even when they were closer to a year old- and they don't look anything like they do now. And I look at pictures of myself or Dan from when we were 8 or 9, and it doesn't look like the adult version of us.<br />

It got me to thinking about who people see when they look at me. Do they see a selfish mama who would rather play Candy Crush than clean the house? Do they see a mama who feels passionately about homeschooling, but is so tired that it takes Miss Magoo's begging to make me teach her?<br />
I hope that people see some resemblance to my Father when they look at me. But I know that just like Baby Girl, I'm growing more and more each day into who He has designed me to be. Right now, the resemblance might be small, but I pray that each day those around me see a little more of Jesus in me, and a little bit less of me.<br />

I won't bore you with the list but even things like pumpkin bars and cereal bars were turning out nasty. Well actually the cereal bars tasted just fine but just wouldn't stick together. I ended up eating them on top of yogurt. <br />
So I was looking for something new for dinner and had this casserole in my head. I had made something similar before but couldn't remember where the recipe had come from. {Turns out, I had <a href="http://www.pinterest.com/pin/368873025699308883/" target="_blank">pinned it</a>}. So I just made this one up with ingredients I knew we liked. <br />

1 lb hamburger<br />
1/2 onion, diced<br />
1 (14.5 oz) can diced tomatoes<br />
1 pkg taco seasoning<br />
1 cup corn<br />
1 pkg corn bread, mixed according to direction on pkg<br />
<br />
Preheat oven to 400 degrees and spray 2 qt casserole dish with non-stick spray.<br />
Brown hamburger with onion. Drain excess grease. Add tomatoes, taco seasoning and cook about 2 minutes over medium heat. Add corn and pour into casserole dish. <br />
Spread corn bread mixture over the top.<br />
Bake for 20-25 minutes until cornbread is golden brown.<br />

This turned out really yummy and the only complaint I had from my family was that there wasn't enough. So next time I'm going to double everything but the cornbread and put it in a larger baking dish.<br />

Bake for 45 until crust is brown and brownie is set. Do not overbake. Cool, but serve slightly warm. Garnish each slice with caramel sauce or chocolate sauce.<br />

I loved it up there. Very few people lived out there and it was so nice. In the summer, we ran as a dude ranch. And in the winter, we ran as a bed & breakfast and did snowmobile tours.<br />
I learned a ton while working there. I did a little of most everything. My title was office manager, but I also worked in kitchen, housekeeping, feeding animals, and so much more. I spent a lot of time in the kitchen.<br />

I also learned to meal plan from working there. We had the same menu every week. Since we had different guest each week, no one cared except maybe the staff. <br />

One of the things I learned to make while at the ranch was bisque. They made Roasted Red Pepper Bisque. I had never had bisque before living at the ranch. I loved it. It's creamy with great flavor but not spicy at all.<br />

6 red peppers, roasted <span style="background-color: white; color: #1e1b1d; font-family: Helvetica, Arial, sans-serif; font-size: 14px; line-height: 17px;"></span><br />
1 small onion, diced<br />
3 celery stalks, thinly sliced<br />
2 carrots thinly sliced<br />
2 Tbsp olive oil<br />
1 cup white wine<br />
4 cups heavy cream<br />
4 cups chicken stock<br />
Salt to taste<br />
Pepper to taste<br />

To roast peppers – wash, rub with oil, salt & pepper. Place on cookie sheet and bake at 500º till skins are roasted. Place in bowl and cover with plastic wrap to steam skin – this makes peeling them easier. Peel after 15 minutes.<br />
Sauté onion, celery, and carrots in oil for about 5 minutes or until soft and onions are translucent. Add wine and reduce liquid by half. Add chopped roasted red peppers, chicken stock and cream.<br />
Slow boil soup for at least ½ hour, longer is better. Put soup in a blender and puree, put it through a fine sieve. Adjust your seasonings. Serve with a dollop of sour cream.<br />

I've been wanting to figure out a way to display the artwork my kids do for a while now. I thought up a lot of different ideas, but in the end they either cost too much or they were too much work.<br />
So the other day while I was walking through the dollar store, I came up with this idea that is simple, cheap, and low commitment (meaning, it only requires 3 small holes in the wall, so moving it isn't a big deal).<br />
What you will need:<br />
<ul>
<li>Picture hanging wire (I found this at Dollar Tree, $1 for 3 rolls, and it took maybe 1/4 of a roll)</li>
<li>Eyelet screws (they carried these at the dollar store, but I wanted super skinny ones to leave as small a hole as possible, so I picked up a bag at Home Depot for a little over $1)</li>
<li>Clothespins (Dollar Tree carried a package of 36 for $1)</li>
<li>Craft paint or spray paint</li>
</ul>
Directions:<br />
1. If you want to, paint your clothespins. You can spray paint them, but I thought using craft paint would be easier, since they're so small. I painted the back half of each clothespin, waited about 5 minutes and then painted the front end.<br />

2. Depending on the length of the wall, you may want to use more eyelet screws, but I used 3 on a wall about 10-12 feet long. Screw 1 eyelet screw on each end of the wall and one in the center.</div>

So my garden turned out not so great this year. I started planting it a bit late and then got bronchitis and a sinus infection before I finished planting. So my zucchini and squash burned up in the Texas heat before I got any produce off them. <br />
I did get a lot of peas, beans, onions, and some carrots and salad greens and one very surprising thing: PUMPKINS. You see pumpkins were surprising because I didn't even plant pumpkins. I have thrown a couple out into the compost pile last fall and surprise, surprise massive pumpkin vines sprouted up and took over a large section of my garden. What a wonderful unexpected blessing. <br />
I was able to harvest several pumpkins before I went to Idaho. I cook the pumpkin, pureed it, and put it in the freezer. Knowing it would be there for fall when I got back. This is the first recipe, I've tried with the pumpkin and it turned out yummy. I still have some puree in the fridge that need used up soon; so look for another pumpkin recipe coming next week! (or the week after)<br />

<span style="font-size: large;">Pumpkin Raisin Bread</span><br />
1 1/2 c. flour<br />
1 1/2 tsp baking soda<br />
1/2 tsp salt<br />
1/2 tsp cinnamon<br />
1/2 tsp nutmeg<br />
3/4 c. brown sugar<br />
1/4 c. granulated sugar<br />
2 eggs<br />
1 c. pumpkin puree<br />
1/2 c. Greek yogurt<br />
1/3 c. raisins (optional)<br />
<br />
Preheat oven to 350 degrees and spray loaf pan with non-stick cooking spray.<br />
Combine dry ingredients (flour, baking soda, salt and spices) and set aside.<br />
In a stand mixer (or use whatever you have), combine sugars, eggs, pumpkin and yogurt and mix until combined. Add the flour mixture a third at a time; mixing after each addition. <br />
Fold in raisin by hand and pour into a prepared loaf pan. <br />
Bake for 50-55 minutes. <br />

{Note: I don't know if it was my goofy oven or just the bread in general but the edge on my bread started to get really dark. So I covered the edges on my bread with foil to keep them from being too dark. So you might want to check your bread after about 40 mins.}<br />

I've seen a lot of pallet art on the internet lately, and some of it is really cute. I knew I wanted to make something, but I didn't have any pallets and I didn't really want to go to the trouble of pulling pallets apart if I could get my hands on some, so I used what I had on hand.<br />
At the beginning of the summer, Dan put up a short fence around our garden area, so that our Great Dane/ Mastiff wouldn't ruin the garden. We didn't want the fence as tall as the rest of our fence, so Dan cut of the ends of a lot of pickets. When I saw the pile of discarded picket parts, I told him I wanted them.<br />
Things got a bit busy, what with planting a garden, running around after the wilds ones, and having a baby, so I didn't get to the project until last week. I couldn't have done this project without my amazing husband's help, so I just want to start by thanking him for being a willing helper.<br />
Dan cut the boards all to the same length. At first, I was planning to do the fruit of the Spirit, with each picket being a different fruit. However, when Dan informed me that each picket was about 5 inches wide, I thought that might end up being a bit bigger than I had planned for. So, I started trying to figure out a different verse I would like on the wall. I ended up asking Dan if he would mind splitting the boards down the middle to be 2 1/2 inches instead, and coming up with an entirely different vision than what I had first had.<br />
Because the pickets were cut down the middle, each one had a rough edge and a smooth edge, so I flipped them back and forth to make them all be rough edge to smooth edge, because I wanted them to look more like pallet wood put together.<br />

I watered down craft paint, because I wanted it to look more like stain. I used that to paint the background a teal blue color.<br />

Then I painted a sun in the corner mixing red and yellow. Finally, I used a pencil to sketch where I wanted my lettering to go, and then painted the letters on.<br />

There are a couple parts I don't love how they turned out, but overall I like the effect.<br />
Once I finished and knew the size I wanted, I asked Dan to cut me two boards long enough to span the rest of the boards.<br />
I put wood glue across the two boards and placed each of the pickets on them.<br />

Then I used a nail gun to nail the pickets to the board. I've used a lot of tools in my life- I grew up working in the shop with my dad- but I've never used a nail gun. It turns out it was easy, but I was still nervous I would accidentally shoot my finger with it or something!<br />

Sometimes I feel like I have nothing to say when I introduce recipes to you guys. Today I just have too many option on what I could say.<br />
I could tell you about the morning I made these tacos. I could tell you how I sliced my finger on the can and spill hot coffee on my legs. And how thankful I was to have this in the crockpot when we got home from church.<br />
Or I could tell you about how I'm always looking for good venison recipes since we normally have a freezer full of it. And how I had some shredded beef tacos at a restaurant a few weeks back and thought I'd could make something like this with the venison I have in the freezer. But I'm really not sure either one of those introduction are really that entertaining....<br />

<b><span style="font-size: large;">Crockpot Venison Tacos</span></b><br />
- 1-2 pounds venison, depending on how many your serving. 1 pound serves about 4-5. (mine was labeled backstrap)<br />
- Fajita Seasoning<br />
- 1 can Rotel tomatoes with chilies<br />
<br />
To Serve:<br />
Soft Tortillas<br />
Any additional tacos ingredients you like. I served mine with Avocados, Diced Tomatoes, Sliced Onions, and Cheese. <br />
<br />
Place venison in crockpot and season with fajita seasoning, cover fairly well. (If your venison is frozen you may want to wait until it begins to thaw before seasoning). Add tomatoes.<br />
Cook on high 3-6 hours (depending on if meat is frozen or not. Mine was halfway thawed and took about 4 hours).<br />
Shred meat with 2 forks. <br />

5 large apples, cored and coarsely chopped</div>

1/2 cup brown sugar</div>

In a large skillet combine all filling ingredients. Cook over medium heat for 15 minutes until apples are soft. In a different skillet, heat about an inch of oil to 350. You know the oil is ready when you put the handle of a wooden spoon in the oil and it bubbles. Roll pie crust out to 1/8 inch thick. Cut 4" circles out of crust. Place about 1 Tbsp of filling in crust.<br />

I know this seems simple, but I have always been a pie crust buyer. I don't like to roll them out. But it's so much less expensive to make your own and actually pretty easy. I didn't roll it out in making it today. But I will for tomorrow's post - Apple Empanadas.<br />

Basic Pie Crust</h4>

2 1/2 cups flour</div>

1 tsp salt</div>

1 tsp sugar</div>

1 cup butter (2 sticks) chilled</div>

1/4 cup ice water (may need a little more)</div>

Cut butter into small pieces and place back in refrigerator. In a food processor, combine flour, sugar, & salt. Pulse to combine. Add butter, pulse until mixture is coarse and only a few pieces of butter are pea size. </div>

Dump dough out onto flat surface and press dough together to make a large lump. Divide into two lumps flatten into discs. </div>

Now that the kids are back in school, I'm refocusing on getting healthy. So I've compiled a list to remind me and to encourage those who'd like to be more active and fit. I know sometimes just taking care of the kids and the chores seems like enough but these are little things that you can include every day.<br />

1. <b>Stand </b>- Choose one activities you normally do sitting and do it standing. I saw this in a magazine a long time ago and they suggested "talking on the phone" but since I rarely do that, I picked folding clothes. </div>

2. <b>Walk - </b>Whether it's taking an actual walk or parking farther away. Look for opportunities to add more walking to your day. Currently I'm parking between my kids' schools and walking to them. Easy way to add activity to my afternoon.</div>

3. <b>Dance - </b>We listen to music a lot at our house. Every time one of our favorite songs comes on, the kids and I stop what we are doing and dance. </div>

4. <b>Cook - </b>Cooking and baking your own food (especially from scratch) is a great calorie burner and has the bonus of you know exactly what you are consuming. </div>
<div>
<br /></div>
<div>
5. <b>Play - </b>Play with your kids or if you don't have kids your dog or if you don't have either you can offer to babysit some (I'm sure some tired mother would be glad for the break!) Whether it's hide and seek or tag or wrestle all help you get your activity level up.</div>

<div>
6. <b>Go Outside -</b> Right now just going outside here in Texas makes you break a sweat but there is something about sunshine that just seems to promote health and activity. </div>
<div>
<br /></div>
<div>
7. <b>Clean. </b>Cleaning your house is great exercise. Of course, you are probably already doing it but at least you can remind yourselves when you are vacuuming for the 3rd time that <strike>day</strike> week that you are burning calories and getting your body moving.</div>

Of course, these are not meant to replace exercise and I'm not a doctor or fitness expert. These are just ways, I'm found to get myself moving more throughout my day.</div>

I would start with something like, "I'm writing Aunt Julie. Who is in Aunt Julie's family?" Then as she came up with the names, we would talk about relationships, like he is her husband and he is also their dad. They are brother and sister. That sort of thing. </span></b></div>

Then another pumpkin has all the grandparents on it, another has our family on it, and another has random friends and family on it. Most of the pumpkins have about 6 names on them, so that isn't too much, and it doesn’t make prayers overly lengthy.</span></b></div>

Our <a href="http://coffeewithus3.blogspot.com/2013/08/back-to-school-pics-and-blues.html" target="_blank">first week of school</a> went not so well, so I was hoping for a much more peaceful second week. It started out well with the day off for Labor Day. We went to see Despicable Me 2 and shopping with my mother-in-law. <br />
Tuesday, the kids were much calmer but Kae's teacher said she complained of an ear ache. She only made it about an hour after school before she was sound asleep on the couch. I took her to the doctor today and she has an ear infection and strep throat. Poor kid!<br />

To help pass the time while she is home from school, we made drums! I had saved two oatmeal cans and a coffee can to make something with and today seems like the perfect day. <br />

I covered the cans with construction paper (you need a piece and a half for the large oatmeal cans). Then I let the kids draw on them with markers and stickers. <br />

Kae said that we needed to add straps so she could wear the drum. I told her that was a project for another day and since she won't be going to school for a few days maybe we will try adding them. Kae is still drumming on her drum as we speak; Jet had more fun ripping the paper off his but hey it still entertained him!<br />

I started couponing in January of 2011. I was gung-ho about it. I stocked up like crazy. We even installed shelving in the spare room closet. I won a gift certificate from Ace Hardware, and I wanted shelves. I spent so much money stocking up. I did get great deals, but you still have to spend money on those deals. I have dialed it way back, and while moving couponing has been put on hold. So here is what I've learned from 2+ years of couponing.<br />

1. Focusing on getting a great deal all the time made me materialistic. I was always focused on buying things. I spent hours every day reading emails to find deals and places to sign up for free things. While its great to get a good deal, those deals shouldn't be my main priority. </div>

2. There will always be another sale and another coupon. Couponing made me feel like I would miss out if I didn't get this deal right now. Sometimes I would scrape coins together to buy that great deal. Recently the word FOMO was added to the dictionary. It means the fear of missing out. Couponing plays into this. When getting great deals only get what you will use in the next 3 - 6 months because there will be the same kind of great deal within that time. And only buy food you normally eat. Even if the cookies are a great deal will you really eat them?</div>

3. No matter how great the deal is, you should never be rude. Buying all the items on the shelf is rude. Blocking the isle so no one can get "your" good deal is rude. Fraudulent use of coupons is rude. Taking too long at the checkout while others are waiting is rude. Taking the entire pad of peelies or blinkies is rude. </div>

4. To know the best price for key items you buy. I spent 6 months writing down the weekly price for about 20 items. I learned that the sale ads lie. It may be in the ad, but it may be the regular price. Know how much what the rock bottom price is, the ok price and the way no am I buying that price. And I learned that most things are at rock bottom price about every three months. Don't be fooled. The Hardworking Husband and I priced prime rib roast before Christmas. It was $5.48/lb at regular price. A week later it was "on sale" for $5.48/lb. One thing I buy a lot of is Diet Pepsi. The HH loves it. (I know it's terrible for him.) I know the rock bottom price is $2.50 for a 12 pack. Sometimes I can get it for a little cheap, but not much. I know that $3 is an ok price and $4.50 is an only if I'm desperate to buy it. $4.50 is cheaper than him buying fountain drinks for $1+ each. </div>

5. Coupons are available for foods that aren't processed. They are just fewer. Use them when you get them. We have tried to eat less processed food. We have a few things we still eat because I can be lazy from time to time. </div>

6. When you find the rock bottom price on meat STOCK UP! We have a large freezer. Most of what I freeze is meat. It's much better to go to the freezer to get the meat you need for dinner than to go pay full price. It will save you more money than any other couponing technique. </div>

I still coupon, but I balance it with menu planning. I stock up on things when they are a great deal, but I still buy a few things at regular price. I have found this to be the best for me and my budget. In our new house, we have a large food storage closet. I will be doing a little more stocking up since I have the room.<br />

As I prepared to go and leave the Hardworking Husband behind, I needed to work on the plants a little. The basil was well beyond needing to be harvested. So I took the scissors to it. I decided since I didn't have a lot of time I would just make pesto and freeze it. It's a great way to use up basil and have it during the winter. I don't know if you know this, but pesto is expensive to buy in the store, but pretty cheap to make if you grow your own basil.<br />

1/2 cup grated Parmesan cheese</div>

1/3 cup nuts (pine, almonds, walnuts or pecan)</div>

1/2 cup oil (a little less if you want it thicker)</div>

Wash basil and pat dry. Put basil, cheese, garlic, & nuts in food processor. I mince my garlic before I add it just so there is no big clump of garlic. Turn on and combine ingredients. Drizzle in oil. My food processor has a little hole in the lid for drizzling oil. If yours doesn't, just drizzle through the feed tube. Once all oil is combined, scrape down sides and mix for a little longer. Remove lid and blade. Scrape out the pesto into a bowl, cover and refrigerate for later use. Or pour into ice cube tray and freeze for a few hours. Then remove and put into a ziplock bag and back into the freezer. It's a great way to have basil on hand without it going bad.<br />

After making it a couple times, I had a crisis one day.<br />
I had mixed together all of my ingredients up to the point where it called for instant pudding. I opened the cupboard and... there was no instant pudding. Ugh.<br />
Little Man was napping, so running to the store was out of the question and I knew the bread would probably turn out terribly if I waited until he woke up, ran to the store, and then tried to bake it.<br />
So I did what any modern girl would do ;) I went to the internet.<br />
I found an <a href="http://www.friendshipbreadkitchen.com/pantry/vanilla-instant-pudding" target="_blank">awesome recipe</a> for instant pudding, and I've actually been more impressed with how my bread has turned out since I've been using this mix in place of packaged instant pudding. Not to mention it doesn't have all the preservatives, PLUS it's much cheaper.<br />

<b>Vanilla Instant Pudding Mix</b><br />
3 cups dry milk<br />
4 cups sugar<br />
1/2 tsp. nutmeg<br />
1 tsp. salt<br />
3 cups cornstarch<br />
5 tsp. vanilla extract<br />
<br />
<ol>
<li>Mix dry ingredients together, then stir in the vanilla extract. (This turned out a bit clumpy, so I think if I made it again I would put it in the food processor to combine. But even though it's lumpy, it works fine in the bread recipe.)</li>
<li>Store in an air tight container. (Needs to be big enough to fit a bit more than 10 cups of the mix.)</li>
<li>Use 1/2 cup of mix in place of a large box (5 oz) of instant pudding in recipes, or 1/4 cup of mix in place of a small box (3-4 oz).</li>
