A Strawberry Salad with Raspberry Vinaigrette |
A couple weeks ago, we had friends over for lunch after church and I knew it was a great chance to try it out. Since her recipe was just for one, I had to use a lot more of everything and of course made some changes, some of out necessity since my store did not carry the dressing in the recipe. So I bought a Raspberry Vinaigrette and it turned out great!
When I was able to harvest my first bit of lettuce & salad greens from my garden, I was excited to be able to make the salad again this time just for me. I also tried it with meat this time. I also figured it was time to share the recipe with you guys.
Dewberry and Strawberry Salad with a Raspberry Vinaigrette |
Berry Salad
adapted from "Strawberry Salad" by 4 Little Fergusons
Ingredients:
3 cups Lettuce, Salad Greens, or Spinach
1/4 cup Diced Cucumbers
1/4 Carrot Shreds
4 whole Strawberry Sliced
2 T. Dewberries, Blackberries, or Boysenberries (optional)
3 slices avocado, cut into bite size pieces
4-5 strips of grilled chicken (optional)
Raspberry Vinaigrette
Wash and dry lettuce, then rip into bite size pieces.
Add all your vegetable to the bed of lettuce. Then add cold grilled chicken (I used leftover fajita chicken) and strawberries.
Drizzle with Raspberry Vinaigrette and Enjoy!

I honestly forgot it was berry season! Last year we went and picked a ton of strawberries and it was amazing to have so mnay to work with in different ways!
