I was originally planning on blogging about something else today but my Mamaw asked for this recipe and Mamaw comes first. {Technically, she is my hubs' Mamaw, or as my kids call her Mapel, but I claim her and she claims me.}
I made these for my sister-in-law's baby shower. She is expecting her first, a baby girl, the end of July!!!! Yay! for another sweet baby girl in the family. I will be sharing some more shower food goodies soon, but like I said these are first because Mamaw requested!

adapted from Potato Cheddar Bites by Petit Foodie
1 c. potatoes, peeled and grated (about 1 large potato)
1 egg
1/4 c. bread crumbs
3 T. onion, chopped
1/2 c. Colby Jack cheese
1/2 tsp. season salt
1/4 tsp pepper
Preheat oven to 400 degrees and spray a mini muffin tin with non-stick cooking spray.
Grate your potatoes (I used my food processor). Let sit for a few minutes and squeeze out excess water.
Combine all ingredients in a bowl.
Fill each muffin tin to the top.
Bake for 18 mins until tops are golden brown.
Tips: If you are doubling recipe like I did for the shower, use a little less than double the bread crumbs and 1/4 cup onion.
